Instructions

1
• In a large pan, heat olive oil over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant. • Add the prawns to the pan and cook for 2-3 minutes on each side until they turn pink and opaque. • Season with salt, pepper, red chili flakes (if using), and a squeeze of lemon juice. Set aside.
2
• In a large pot, heat olive oil and butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes. • Add the garlic and cook for another minute, stirring constantly. • Stir in the Arborio rice, ensuring each grain is coated with oil and butter. Cook for about 2 minutes until the rice starts to lightly toast. • Pour in the white wine and stir until the wine is absorbed by the rice. • Gradually add the warm stock, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding more stock. Continue this process until the rice is tender and creamy, which should take about 18-20 minutes. • Once the risotto is cooked, stir in the grated Parmesan cheese. Taste and adjust seasoning with salt and pepper if needed.
3
• Spoon the risotto onto plates and top with the cooked prawns. • Garnish with fresh parsley for a burst of color and freshness.
