Roasted Red Pepper Hummus & Wine Pairing

Ingredients

1 (15 oz) can of chickpeas, drained and rinsed
2 large roasted red bell peppers (jarred or homemade)
¼ cup tahini
2 tablespoons fresh lemon juice
1 garlic clove
½ teaspoon ground cumin
¼ teaspoon smoked paprika
Salt to taste
2 tablespoons olive oil (plus extra for drizzling)
Optional garnish: chopped parsley, paprika, sesame seeds
Herbed grilled pita (cut into wedges)
Celery sticks
Baby carrots

Instructions

In a food processor, combine chickpeas, roasted red peppers, tahini, lemon juice, garlic, cumin, and smoked paprika. Blend until mostly smooth.

With the motor running, slowly drizzle in olive oil and blend until the hummus is silky and creamy. Taste and season with salt as needed.

Transfer to a serving bowl. Drizzle with olive oil and top with any desired garnishes.
