Zesty Lemon-Herb Grilled Salmon

Ingredients
4 salmon fillets (about 6 ounces each)
2 tablespoons olive oil
1 small shallot, minced
2 tablespoons lemon juice
1 teaspoon lemon zest
1 teaspoon dried thyme
1 teaspoon garlic powder
Salt and pepper to taste
Fresh parsley, chopped, for garnish (optional)

Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).

In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, dried oregano, dried thyme, salt, and pepper.

Pat salmon dry and place the salmon fillets on a large plate or baking dish. Pour the marinade over the salmon, making sure to coat each fillet evenly. Allow the salmon to marinate for 15-30 minutes, depending on your preference.

Once the salmon has marinated, lightly oil the grill grates to prevent sticking. Place the salmon fillets skin-side down on the grill.

Grill the salmon for 4-5 minutes per side, or until the fish is cooked through and easily flakes with a fork. Be careful not to overcook the salmon to keep it moist and tender.
