Ingredients

Onion Jam

2 large red onions, thinly sliced
2 tbsp olive oil
¼ cup brown sugar
¼ cup balsamic vinegar
1 tsp fresh thyme (or ½ tsp dried)
Salt and freshly cracked black pepper, to taste

Beef Sliders

1 lb Harris Ranch ground beef (80/20 preferred)
Salt and freshly cracked black pepper
6 slices smoked Gouda cheese, halved
12 soft mini slider buns
Butter, for toasting buns

Instructions

Prepare the Red Onion Jam: Heat olive oil in a skillet over medium heat. Add sliced red onions with a pinch of salt. Cook slowly for about 20 minutes, stirring occasionally, until softened and caramelized. Stir in brown sugar, balsamic vinegar, and thyme. Reduce heat and simmer until thick and jam-like, about 10 minutes. Season to taste and set aside.

Cook the Beef Patties: Divide ground beef into 12 small patties, slightly larger than the buns. Season generously with salt and pepper. Cook in a hot skillet or grill pan over medium-high heat for 2–3 minutes per side, until well seared and cooked to your desired doneness.

Add the Smoked Gouda: During the final minute of cooking, top each patty with smoked Gouda. Cover briefly to allow the cheese to melt.

Toast the Buns: Lightly butter the cut sides of the buns and toast until golden and warm.
